This is one of my all-time favorite recipes, and let me tell you why. I often receive donations of protein powder from patients and friends who, for various reasons, don't want it for themselves.
Once, I received a 2.5kg pack of banana-flavoured protein powder that was heavily sweetened and had a very artificial banana flavour. I was unsure what to do with it, but then I had an idea: why not make protein muffins? This way, I could have a delicious and protein-packed snack for my mid-afternoon cravings while also finding a good use for the protein powder.
From the very first time I tried it, these muffins turned out to be an amazing option for a warm, protein-filled treat. Join me as I show you just how easy it is to prepare them.
Ingredients:
4 ripe bananas (365g)
100 ml non-dairy milk
1 tsp cinnamon
100g oat flour (blended to preserve nutrients)
30g chickpea flour
70g banana protein powder (you can swap the flavour of your protein and it will still be tasty)
1 tsp baking powder
1/2 tsp baking soda
Directions:
Preheat the oven to 200°C.
In a blender, combine the bananas, non-dairy milk, and cinnamon until well combined.
In a large bowl, mix together the oat flour, chickpea flour, protein powder, baking powder, and baking soda.
Add the banana mixture to the dry ingredients in the bowl and mix with a spatula until a thick batter forms.
Add the options ingredientes such as chocolate chips, cocoa nibs, nuts, berries.
Divide the batter into muffin tins.
Bake for 10 minutes at 200°C, then reduce the temperature to 180°C and bake for another 20 minutes or until cooked inside.
Remove from the oven and let the muffins cool before eating.
